      Liberty Fields Apple Balsamic Vinegar

This rich, intense and deeply flavoured 6-year old apple balsamic vinegar is made using the traditional Italian method of reduction and concentration of the juice over a lengthy period of time, rather than by adding flavouring and colouring.

Liberty Fields produce small batches of superb syrup, balsamic vinegar, cider and vodka by hand from the fruit of their own Dorset apple orchards, planted from 2010.

The balsamic vinegar is aged for 6 years in barrels. The only ingredient is apples.

Use like Italian balsamic vinegar. As well as using on salads, it’s a great partner for grilled meats or charcuterie; a drop brings out the taste of strawberries and other soft fruits; and it can really enhance a stew, sauce or a soup.

Crone’s Cider & Perry Vinegar, Organic

Crone’s organic cider and perry cider is made in Norfolk by Robbie Crone, from fully fermented organic apple and pear juice.

The fermented juices turn from cider and perry to vinegar through a natural process. The vinegar is then matured in oak casks for at least 3 months before bottling.

The vinegar is neither pasteurised nor filtered so some sedimentation, from formation of a vinegar mother, is likely. If a clear product is required the vinegar can be poured through a plastic or stainless steel strainer, or a coffee filter for best results.

The original source of umami, the "fifth flavour" first identified in 1908, whole-leaf kombu / kelp adds a superb deep rich flavour to broths, soups and stocks. Kombu can improve digestion and helps to soften pulses and grains during both soaking and cooking.
